Breakfast Toast Cups

Introduction

In this recipe: Higher Fibre Loaf

You can choose to make this recipe using regular or mini muffin tins!


Directions

  1. Preheat oven to 450F
  2. Using a bread knife cut the crusts off 8 slices of Cobs Bread Higher Fibre Loaf
  3. If you are using a mini muffin tin you will likely only need 3-4 slices, and should cut each bread slice into quarters
  4. Brush cooking oil into the muffin tins & place bread in so it sits nicely
  5. In a bowl whisk eggs, chives and Grana Padano
  6. Fill each muffin tin with the egg mixture, approx 4 tbsp of mixture
  7. Top with desired amount of cooked bacon crumbles
  8. Bake for 12 minutes or until breakfast cups are golden brown in colour
